Spinach Ravioli with Ricotta Filling and Lemon Zest Ground Chicken Sausage

Besides my Crockpot Teriyaki Chicken Recipe, this Chicken Sausage Lemon Zest Ravioli is one of my favorite recipes to make (& eat).

I mean, who doesn’t love raviolis?

The blend of veggies, cheese, and meat makes it savory while the citrus spices it up to make for a mouthwatering dish. It’s hassle-free, making it perfect for weeknights!

Ingredients
Spinach & Ricotta Ravioli
Chicken Sausage
2 lemons
4 scallions
1 medium-sized tomato
1/2 cup veggie stock
2 tablespoons butter

8 tablespoons sour cream
2 tablespoons Italian seasoning

Instructions

Cook the ravioli: Bring a large pot of salted water to a boil. Once the water boiling, gently add the ravioli to the pot. Cook about 5 minutes or until al dente and floating at the top. Reserve 1/2 cup of the pasta cooking water and then use your strainer to drain water.

Cut the veggies: Zest lemon into a small bowl and then cut into half. Dice the tomatoes. Thinly slice scallions and divide the white and green parts.

Cook the sausage: Heat a large drizzle of olive oil in the large skillet over medium heat. Add the scallion whites, lemon zest, chicken sausage, and Italian seasoning. Break up the chicken sausage with a spatula or wooden spoon while the sausage browns, about 5 minutes. Stir in the tomatoes and cook another 2 minutes.

Make the sauce: In the same large skillet with sausage, stir in veggie stock, a quarter of the pasta water, and lemon juice from 1/2 of lemon. Cook for 2 minutes on low heat. Stir in sour cream, butter, and season with salt and pepper. Add pasta water as needed for consistency. Gently stir in the ravioli ensuring each ravioli is covered in sauce.

Serve: Divide ravioli mixture between bowls and garnish with scallion greens. Serve with remaining lemon wedges on the side.
