Indian Spiced Lentil & Roasted Cauliflower Flatbread Recipe

Try something new with this Indian Spiced Lentil & Roasted Cauliflower Flatbread. This vegetarian flatbread is full of flavor. The fresh cilantro and Greek yogurt provide a cool refreshing taste, while the spiced lentils and Indian-style butter sauce add a kick.

2 Small Mixing Bowls
Pizza Wheel Cutter

Ingredients
Naan (alternatively use a flatbread)
Indian-Style butter sauce
1 cup French green lentils
1/2 cup Green peas
3 cups Cauliflower florets
1 Jalapeño pepper
1 Shallot
Cilantro
1 Lemon
Greek yogurt

3 tbsp Extra-virgin olive oil (EVOO)

Instructions

Pre-heat oven to 450°F

Cut the veggies: Roughly chop the cilantro, thinly slice the jalapeño peppers into rings, thinly slice the shallot, and slice the lemon in half.

Marinate: Add the shallot and jalapeño into the small mixing bowl. Juice half the lemon and set aside to marinate.

Prepare: In the medium mixing bowl, toss the cauliflower and 2 tablespoons of EVOO while seasoning with salt and pepper. Spread the cauliflower onto a lined baking sheet.

Bake: Place the cauliflower in the oven for 20 minutes or until lightly browned. Set the naan (or flatbread) directly on the oven rack and cook for about 5 minutes or until toasted and golden brown.

Cook Veggies: Add 1 tbsp of EVOO to large skillet on medium heat. After the oil is hot, add the peas and cook for 2 minutes. Add the French green lentils and butter sauce. Bring to a simmer, stirring occasionally, and cook for 2 minutes before turning off the heat.

Prepare sauce: In the other small mixing bowl, add the Greek yogurt while juicing the remainder of the lemon. Slowly stir in water until reaching a thin sauce that can be used to drizzle on the flatbread.

Make flatbread: spoon the French green lentils, peas, and butter sauce evenly across each piece of naan (or flatbread). Place cauliflower, jalapeño rings, and shallots on top of the sauce. Garnish with cilantro and drizzle the Greek yogurt lemon sauce on top.

Serve: Use a pizza wheel cutter to slice the naan (or flatbread) into wedges and serve!
