On-the-Go Breakfast Quiche Bites Recipe

It can often be a struggle just to get up, get ready, and make it to work on time. Let alone if you’ve got children, animals, or whatever else adulting consists of. 

I know how rough my mornings can be and I don’t even have all these adult responsibilities. But I do know that not only is breakfast my favorite meal, it’s also the most important meal of the day!

So, what’s the solution? Where do I find the time to prepare a healthy breakfast…or any breakfast at all?

These on-the-go breakfast bites are the answer to your morning struggle!!!!

These mini quiche bites are so incredibly easy to make. Add 15 minutes to your weekly meal prep and you’ll have a healthy breakfast every morning (or a great post-workout snack). The variety of ingredients is pretty endless as well so you’ll never get bored with breakfast!

On the Go Breakfast Quiche Bites Recipe

Prep Time: 5 minutes  Cook Time: 15 minutes Serving Size: 4

Utensils
Muffin Tin
Medium Bowl

Ingredients
2 Chicken Sausage links (my favorites here)
1 cup Spinach
1/2 cup Mushroom
1 tablespoon Red Onion
4 Eggs
1/2 teaspoon Garlic Powder
Salt
Pepper

 


INSTRUCTIONS

Preheat the oven to 350 degrees and spray muffin tin with coconut oil cooking spray

Cut the veggies: Chop spinach leaves. Cut mushrooms. Dice red onion.

Prepare the bites: Slice the chicken sausage links down the center horizontally and then chop into quarters vertically. Break eggs into a medium bowl and whisk together until the yolk is broken up, add salt, pepper, and garlic powder and mix well. Evenly distribute the chicken sausage and vegetables into the muffin tins. Pour egg mixture into each muffin dish filling each one about 3/4’s of the way full. Place in the oven for 10-15 minutes. 

Serve: Serve as is or with a side of avocado and salsa, enjoy!


TIP: Bake a variety by using different vegetables and/or meat fillings in each muffin tin. Use multiple muffin tins to make more, keep refrigerated and save for a quick and easy on-the-go breakfast or snack during the week!
