There’s something about pancakes where I find myself reserving them for a special weekend treat. With this healthy protein pancake recipe, you can have pancakes any day of the week guilt-free!
Combining some of my favorite ingredients of bananas, peanut butter, coconut flakes, and protein powder these banana protein pancakes are perfect for a post-workout snack or healthy meal option.

Ingredients
1 scoop Garden of Life vanilla protein powder
1 cup rolled oats
2 egg whites
1 large egg
1 banana
1/3 cup almond milk
1 tablespoon honey
2 tablespoon peanut butter
1 teaspoon coconut flakes
INSTRUCTIONS
Add coconut oil to the griddle at a medium to high heat
Make the pancakes: Slowly pour the batter into the griddle; approximately 1/4 cup for one pancake. Lightly brown on one side for 2-3 minutes, lifting up the edge to check. Carefully flip with a spatula and lightly brown the other side then flipping onto a plate. Repeat process until all of the batter is used.
Serve: Add a tablespoon of peanut butter, a few slices of bananas, and coconut flakes to the top of your stack of pancakes for an Instagram worthy photo and extra flavor.
Tip: Adjust ingredients depending on your personal preference for the size and consistency of your pancakes. I personally prefer large fluffy pancakes, so I use less almond milk and honey and more rolled oats and sometimes 1/4 extra banana.
