Mediterranean Quinoa Salad

This healthy and easy to make salad combines all the flavors of Mediterranean cuisine in one bowl. Packed with protein, it’s perfect as a side dish and even better as the main entree.

Ingredients
1 1/2 cups Quinoa
1/2 Red Onion
1 Cucumber
1 Red Bell Pepper
3/4 cup Kalamata Olives
1 1/2 cups Cherry Tomatoes
3/4 cup Feta Cheese
1 cup Parsley
 
Dressing Ingredients
1/4 cup Extra Virgin Olive Oil
1/2 tablespoon Maple Syrup
1/2 tablespoon Dried Oregano
3/4 teaspoon Salt
1/4 teaspoon Pepper

 


INSTRUCTIONS

Cut the veggies: Chop the cucumber, red bell pepper, red onion, and tomatoes. Finely chop the parsley leaves and

Cook the quinoa: In a medium pot, bring 2½ cups of water to a boil. Add the quinoa to the boiling water. Cover and reduce to a low simmer for 15 minutes, until tender. Fluff the quinoa with a fork.

Make the dressing: Whisk together the dressing ingredients and set aside.

Prepare the salad: In a large bowl, toss together the cucumber, red bell pepper, red onion, tomatoes, parsley, kalamata olives, and feta. Add the cooked quinoa, slowly stirring to combine.

Serve: Pour the dressing over the salad and toss to combine. Enjoy!


TIP: Divide into containers for an easy on-the-go healthy lunch during the week.
