It could be the messy fun I have making it or the delicious meal it produces but this is one of my favorite recipes to make (and eat). The creamy rich texture of hummus mixed with hints of tangy lemon blend together to create this Hummus-Crusted Lemon Chicken.
Prep Time: 10 minutes Cook Time: 45-60 minutes Serving Size: 4
Large Baking Dish
1 10-ounce Lemon Hummus
Salt
Pepper
INSTRUCTIONS
Preheat oven to 400 and spray a large baking dish with coconut oil.
Prepare the chicken: Your hands are going to get a little messy but this is the fun part! Use your hands to coat the chicken breast with a thick layer of hummus on both sides.
Prepare: Spread 3/4 of the squash and zucchini rounds onto the bottom of the large baking dish. Squeeze half the lemon on top and lightly drizzle olive oil on top of the squash and zucchini. Sprinkle with paprika, salt, and pepper. Place the hummus covered chicken in the baking dish on top of the layer of zucchini and squash. Squeeze half the lemon on top and sprinkle with paprika, salt, and pepper. Spread the remaining zucchini and squash on top of and around the chicken breast. Add half of the lemon wedges into the large baking dish and bake for 45-minutes to 1 hour.
Serve: Remove baking dish from the oven, let cool, serve (option here to serve with brown rice) and enjoy!
TIP: If you can’t find lemon hummus at your local market, use a Mediterranean hummus, and add freshly squeezed lemon to provide the same tangy flavor.
